What does it consist of?

Setrufma, mushrooms and truffles from Maestrazgo, is a company created 7 years ago by siblings Cristina, José Enrique and Sergio. They belong to a lineage of mushroom and truffle pickers, they are the fourth generation of a family that obtained part of their income from these fruits offered by the land.
Trained in Environmental Sciences and Marketing, lovers of their people, of the territory and determined to stay and bet on it, they decided to take advantage of the natural resources offered by the territory and the gastronomic value of mushrooms and truffles and family tradition and betting on innovation, have created a variety of gourmet products with these two materials. Since then they have not stopped growing and evolving. They started with the commercialization of fresh mushrooms and truffles and with a range of five handmade products. Little by little the variety of products has been increasing and nowadays they have up to 34 references in the market. Initially the company began its journey with online and face-to-face sales through gastronomy fairs, with which they became known throughout the country. Currently they also have two physical stores, one in Cantavieja and the other in Culla (Castellón). It is a leading company in the territory that is also committed to showing its work and tradition to visitors, so since last year it has been offering the tourist experience “Trufiturismo en el Maestrazgo” (Truffle tourism in Maestrazgo). To enjoy it, you just have to make an appointment with them and come on the day and time indicated, usually at 10 or 10:30 am, to their store in Cantavieja, at the beginning of the main street. From there they go for a walk to the workshop, where they already have a field of holm oaks. The activity begins in the field where, equipped with a bag and a collecting tool, the task of searching for truffles begins. Luna, our truffle dog, with her magnificent sense of smell, is able to detect the most hidden truffles. There, while explaining what a truffle is, how it is formed and how it is harvested, we learn about the ecosystem where they are formed and the characteristics that give them the altitude and climate of the Maestrazgo region, as this is a differentiating element in the taste of truffles. Once the truffles have been collected, they are taken to the workshop, where the truffles are classified and it is explained which ones have more or less value according to their shape, size, etc. From there, if the client has also chosen to enjoy the tasting, several of the delicious products made by Setrufma in a traditional way and without any additives are tasted, such as chanterelle pate, truffled bell pepper jam, Cárnicas Ortín sausage with Setrufma truffle, cheese with truffle, etc., all accompanied by the wine “Con tú”, from the centenary garnachas of Casa Masas de Mirambel. Normally the activity lasts 2 h without tasting and 3 h with tasting.

The activity takes place outdoors, so it is advisable to wear comfortable and warm clothing.
