Mushroom scrambled eggs

Preparation:

  • We start in a non-stick frying pan browning a clove of garlic.
  • Once browned, add the mushrooms (optional).
  • Sauté the mushrooms over medium high heat, add a little salt and pepper.
  • When the mushrooms are ready, beat the eggs and add them.
  • To make the perfect scrambled eggs we must do it over low heat and go stirring, we continue if having the pan over high heat we throw the eggs will be done instantly and they will be dry. As we want juicy scrambled eggs, it is best to do it little by little until it starts to set.
  • Once we have the desired texture, remove and serve.

Ingredients:

  • 2 eggs per person
  • 1 tray of mushrooms (mushrooms, oyster mushrooms,…)
  • 1 clove garlic
  • Extra virgin olive oil
  • Salt
  • Black pepper
